what is your quick, go to dinner
when you just don't have the time or stamina to cook healthy? i feel like if i don't have the energy to put in effort in my meals then the alternative is usually unhealthy.
what is your quick go to healthy meal when you don't want to really cook?

-Pacific Organic butternut squash soup -Indian lentils and eggplant from Trader Joe's with jasmine brown rice -Chicken cutlet (I buy a 10 lb bag from costco) sauteed with a little olive oil, garlic and basil with mixed greens -Cannellini beans with garlic and tomatoes (canned San marzano)

Turkey or fish tacos...I feel like I always have wraps, shredded cheese, lettuce and hot sauce. The turkey meat or fish doesn't take long and I never make any sides with those..so pretty quick for me. We have one of those a week at least.
If Dh wasn't home, I'd make a black bean and cheese wrap in the micro.

soft tacos made with precooked chicken definitely
shredded lettuce, tomato, shredded cheese, sour cream, salsa and chicken....viola....quick & easy!

Whole wheat pasta with marinara sauce.
I quickly heat up some olive oil and garlic in a pan and add a can of diced tomatoes and just cook and season to taste.
Sometimes I'll add spinach if i have any in the house and/or canellini beans.

steamfresh veggie bag in the microwave, and a veggie burger, sometimes i'll make those 90 second rice things too, or nuke a small baked potato in the microwave

I always freeze portions of soup when I cook a new batch. THis way I always have something for those lazy niights. Otherwise a dr praeger alifornia burger on a 100cal english muffin, bbq saue, lettuce tomato and a salad of some sort
