Gluten Intolerance
I have been trying to limit my gluten but I am still having issues. Does anyone have a list of foods that are gluten free or a list of places to look at for information? I am thinking of trying to go entirely gluten free.

my niece has celiacs and my sister in law has been going to uncle giussepies...they have a huge selection of gluten free products, but over time we have found so many foods that can be eaten and/or easily tweaked to be gluten free
chex cereals, gluten free rice krispies
rice pastas (tinkyada is good)
rice, arborio rice, risotto
rice and beans
potatoa latkes with corn starch instead of flour
crustless spinach quiche (3 egg yolks plus 2 whole eggs, 1/2 cup of grated baby swiss/muenster cheese, 1 box of frozen spinach drained well....mix up and make like you would pancakes (they will puff up and when cooked become firm) i've made them with more egg whites, but they get to runny when you are cooking them.
anything potato mashed, fried, baked, hash browns etc
you can make bread crumbs with gluten free bread....just take a few slices and bake/toast lightly and throw in the food processor then just make anything you would normally make with them (chicken cutlets, pork chops etc)
You can also use mashed potato flakes in lieu of breadcrumbs
meats
sauce
spaghetti squash
fish
Now that celiacs has become more well known, you'll be amazed of what you will find that is gluten free....let me know if you need more ideas.....I only needed one time for her to be at my house, where I was like crap....i have nothing for her to eat when my sis in law left 'her' food bag home....little did I know 80% of it she was able to....i was just looking for gluten free on the package. My son has a gluten intolerance. We shop at Wild By Nature Whole Foods Uncle Gussepis Stop and Shop has a good selection too.

I shop at: Shop Rite Trader Joe's (they have good muffins, bread and brownie mix) Fairway Whole Foods
Also keep in mind that gluten free diets are not friendly to you gut bacteria so try to incorporate yogurt or a probiotic pill into your diet. Another thing I would suggest is to introduce new flours slowly- I have found that certain bean flours, xanthan gum and sorghum flour do not agree with me- They are very binding and upset my stomach if I eat them frequently. I have found rice flour and quinoa flour are the best for me. Keep a food diary and note when you feel ill so you have a better idea of what upsets your stomach.

Has a doctor diagnosed you with a gluten intolerance? I only ask because if you do have celiac disease & it hasnt been diagnosed yet - you really should not be cutting out the gluten yet. If you cut out the gluten & then get blood work done, the gluten antibodies wont show on the blood work.

You can have a gluten intolerance without having celiac disease. The only way to test for a food intolerance is to eliminate the food from your diet then reintroduce the food...if you get sick you are considerered intolerant.

trader joes has good selection and not nearly as expensive as Uncle G's. Even stop shop and walbaums have a good selection now too. I Ungcle G and WHole Foods to be most expensive.
