Gluten Free
Hello ladies, I suffer with an ulcerative condition in my intestine and am looking to change my diet to gluten free in the hope this might help. Any suggestions for Gluten Free recipe resources, books, blogs, anything? I'm desperate. TIA.
(Please don't move to Health . . .)

Re: Gluten Free
my sister has a gluten intolerance and we've done a lot of research.
We Started out with "Gluten Free for Dummies" which has tons of info.
We have experimented and find we can make most things gluten free. Most grocery stores carry a lot of gluten free things now, but we tend to shop at smaller non-chain health food stores for the best selections.
You'd be amazed how many things contain gluten (for example- twizzlers). The key is to read ingredients and learn the other names for gluten.
I can't help out with websites much, because my sister is also a avegatarian and lactose free...so our searches are a bit more complicated! HAHA

Re: Gluten Free
thanks everyone! I did find the gluten free girl website, and also gluten free goddess. I really need to understand where glutens are found so I can avoid them. It seems like eating foods that are generally unprocessed and whole are best, so that is where I am starting!
Also, I've taken to the habit of typing in "name of x product gluten free?" into google and see what comes up! I definitely need noodle / pasta alternatives.

Re: Gluten Free
Whole Foods sells a quinoa pasta so you can get your pasta-fix. It changes the water yellow which was odd - the box warned of it though. I want to say it was angel/anceient and a blue/green color.

Re: Gluten Free
I was diagnosed with celiac disease 5 1/2 years ago...i have a list of my favorite products..but i have to just add that if you are working with a doctor on your condition, i would check with him on going GF. If you go for bloodwork after you have eliminated gluten from your diet, it will not be an accurate reading. You need to have gluten in your body in order for the antibodies to show on bloodwork.
********************************
Some of my favorite GF brands are: Udi's - bread, bagels, muffins (i like this bread best because it doesnt need to be reheated in order to eat) Allergy Free - frozen breaded chicken French Meadow Bakery - chocolate chip cookies are out of this world Glutino (crackers, pretzels, cereal is alright) Snyders & Bachmann make gf pretzels that taste good but they are super hard.. Schaar (crackers, cookies are awesome!, pasta, bread) Mi Del (chocolate chip cookies - GF version of Famous Amos) Aleia's (bread crumbs and croutons) Conte's (raviolis & pierogies) Sam Mills (pasta - i prefer corn pasta to rice pasta) Better Batter - all purpose flour. best flour I've had. Rice Chex - my every morning breakfast (makes awesome rice krispie treats..i started making my own bread crumbs with the cereal too - just use the food processor & add spices to my liking.) Betty Crocker/General Mills: glutenfreely.com (the cookie, cakes and brownie mixes are so good) Bisquick - small orange box is GF. ive used it to make Red Lobster's Cheddar biscuits. Not too bad. Pacific - soups & broths (although there are some canned Progresso soups that are GF)
Kraft & Heinz are reliable companies. Their products will clearly label if there is gluten.

Re: Gluten Free
Thanks for the responses.
I'm thinking about going gf not due to celiac, but rather, I have ulcerative proctitis (like colitis, but in the lower intestine - TMI for a food board?) and essentially it is inflammation, among other things, in my lower intestine. Since a GF diet helps reduce inflammation, I'm wondering if it could help. There's no "cure" for UP, I treat it with meds I won't speak of here, but don't want to be on them forever. Would love a natural remedy. Sigh.

Re: Gluten Free
I am gluten free and I have avoided pasta for months until a friend who is a chef at a popular LI Italian restaurant served me gluten free pasta. It was great, corn based. My mom tried it and liked it a lot and had no idea it was gluten free. I can get you the name if you want, she sent me home with tons, but I am at work right now and don't have it in front of me...it is available online, haven't found it in stores yet.
Also, be careful of soy sauce, wheat is the second ingredient. Who knew??
Also, the brand KIND is great. All gluten free granola's for my yogurt and their bars are awesome especially the almond/coconut.
GF Rice Krispees are also awesome and chocolate chex are a nice night time snack for me. Also, if you shop at KK, check out Wild by Nature section. They have a lot of gf stuff, Barbara's puffins is a great cereal/snack/put in your yogurt kinda thing.

If you are worried about inflammation you should also consider increasing your intake of omega 3 fatty acids. The best sources are cold water fish. You can also take a fish oil supplement. There are many foods that are considered pro-inflammatory such as rice, corn, corn syrup, casein (found in dairy), and Polyunsaturated vegetable oils (high in omega 6 and are converted to Arachondic acid which can be inflammatory). You should try to reduce your intake of omega 6 fatty acids. There is a lot of information on omega three to omega six dietary ratios it might be helpful for you to take a look. Curcumin and ginger are are thought to be anti inflammatory also.
I am gluten free due to a food sensitivity and it can be tough at first. The best advice I received when making the switch to gluten free living was to introduce new flours slowly. Many of the flours used in gluten free products can be very binding. I use almond flour and coconut flour a lot more than rice based flour mixes. I tolerate them much better. I try to stick to whole grains such as quinoa, buckwheat and brown basmati rice. Occasionally I will use grits or risotto. In the past year it seems like almost every supermarket carries gluten free foods. My favorite stores are Shop Rite, whole foods and Fairway. Good luck!

Re: Gluten Free
My DH is gluten free because of Celiac. Check labels because a lot of the foods we would usually buy are naturally gluten free. Don't get too caught up in the "gluten free products". We get a pasta in a bag, its a potato one that is in a bag with pink. Its great, I usually just use that now and we all eat it.

My MIL was diagnosed with celiac's 2 months ago and I found a website called glutenfreegoddess.com. It is similar to skinny taste and she makes everything from scratch.

Re: Gluten Free
I am Gluten Free and get most stuff at Stop and Shop they really have a big selection if you don't live close to Whole Foods, Fairway or Trader Joes! At first I goggled everything I ate that wasn't labeled Gluten Free that helped. There is also a place in Belmore called Bare Naked. It is a bakery that only sells things that are Gluten Free. They sell bagels, bread, pizza, cookies and a bunch of other things. They are really good. Also, La Bottega has a gluten free menu and there bread is one of the best. As far as books I read The G Free Surivial Guide by Elizabeth Hasselback. It was pretty informative.

Re: Gluten Free
In addition to everything everyone has posted, Sherry's in Babylon has a good amount of gluten free foods. And Jackson Hall in East Islip has a gluten free menu.
I've tried my hand at baking - it can get expensive but mixes from Bob's Red Mill and Cherrybrook Kitchen have been good. You can find them at Sherry's, Whole Foods, etc. And I love quinoa pasta from Ancient Harvest - I think it cooks better than rice pasta and tastes better too.
Also there's a gluten (soy, dairy, egg) free bakery in NYC called Babycakes - they deliver!
