Re: Eating better without breaking the bank
Sure
Breakfast is almost always on the go. I teach in the city. Usually its a banana and some almonds.
Lunch is typically a large salad. I get creative with this though. I will use spinach and oranges or lots of grilled veggies.
I like to snack on dried fruit. According to the Paleo Diet books I have read you are supposed to limit this and it is considered a "Paleo sweet" but because my diet is already so limited I have a little more than most people who follow the Paleo Diet.
Dinners vary greatly. I make butternut squash soup. I just boil it and then blend it and add nutmeg or other spices. Baked sweet potatos. Vegetable "stew" (basically all allowed veggies in the crock pot and let it slow cook ), Salads, aritchokes, and lately I have been trying many recipes from here http://www.vegiehead.com/vegan-paleo-recipes.html
Also I like to have at least one of my sunwarrior protein shakes. I use the plain flavor so that I have no added sugars. That can be used to make "pancakes" and other things too.
Also, I already made vegan baked goods. Now I use almond or cocunut flours/meals to replace the whole wheat flour and I have to play with the recipe (less wet ingrediets, more dry) and have made banana bread and a few other recipes successfully.
