I have a great mac n cheese recipe to share
OK-I am posting the link for the recipe I use. However, i make the following changes. I add a bit more pasta (2 cups uncooked as opposed to 1.5).
Instead of american cheese, i use sharp cheddar. At first i was skeptical about velveeta in the recipe, but its a must for amazing mac n cheese. Mixed with the cheddar, its awesome. I keep everything else the same.
At the end I actually melt butter and toss in seasoned breadcrumbs until they are toasted. I sprinkle them on top of the mac n cheese. Its awesome. Just be careful to not burn the breadcrumbs, they can go from golden to burnt in seconds..I always keep the temp at medium heat.
It will look like there is a lot of cheese (even liquidy) when you mix it with the pasta, but it all soaks up. My family requests it all the time, i make it alongside pulled pork.

Thanks for sharing. Yum! Funny I always felt the same way about the velveeta but it really does melt so smoothly! Sometimes I have a problem with cheddar making it too grainy.

I agree! I hate hate hate using anything processed, but it makes a fabulous mac n cheese!!! I basically do the same thing except I mix crumbled Ritz Crackers w/ butter and sprinkle that on top!!
