Banana Bread
Anyone have a really good banana bread recipe? I have an awesome pumpkin bread one that I make all the time, but we need a change. I haven't made banana bread in years. I looked online but there are millions of recipes and I didn't know which to choose.

Re: Banana Bread
i follow this basic recipe, occassioanally ill add 1/2 cup walnuts, cinnamon, vanilla, nutmeg; depending what i have on hand!
2 cups all-purpose flour 1 teaspoonbaking soda 1/4 teaspoonsalt 1/2 cupbutter 3/4 cupbrown sugar 2eggs, beaten 2 1/3 cupsmashed overripe bananas
Directions
1.Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. 2.In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan. 3.Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
*be careful not to overmix or it will become dry!

Just make sure that you buy bananas and not plantains!! I bought what I thought were overripe bananas but nope! It was pretty interesting to say the least!
