Re: Clam sauce recipe
Boil water for your pasta
In a separate pot sautee lots of garlic in a good amount of oil, then put your rinsed clams (I buy the small ones in the shell) in the pot. Put a ton of fresh parsley on top, pour in one bottle of clam juice (sold in the fish store) and I use about 2 cups of good white wine and I put that in. Black pepper and salt. Put the lid on and the flame should be low-med. I cook this for 20 mins, the clam shells will pop open. It smells amazing and is very easy.

Re: Clam sauce recipe
This is my go-to easy, quick weeknight version (Cooking Light's Linguine with Garlicky Clams and Peas):

You can easily omit the peas for picky palates... it works just as well without them!

Re: Clam sauce recipe
This is my go-to recipe for linguini with clams. Gets rave reviews every single time.
1 bottle of clam juice 2 cans minced clams (drained) 3 scallions 3/4 cup of white wine 3 cloves of garlic, minced 1 cube of chicken bullion chopped parsley (about 1/4 cup) 1 dozen little neck clams 4 tbsp butter 1 lb linguini
Place clams in a large bowl filled with warm water and 2 tbsp of baking soda. Let sit for about 10 - 15 minutes. This rids the clams of sand and gets rid of the "gritty" texture they sometimes have.
Meanwhile, boil water for pasta and cook linguini as directed.
In a large skillet, heat the butter and saute the garlic for several minutes over low-medium heat. Be careful not to brown the garlic. Add the scallions and cook for another minute. Then add the wine and allow to simmer for 2 - 3 minutes. Add clam juice, bullion cube, canned clams, parsley.
Remove whole clams from the water, rinse, and scrub clean. Add them to the skillet and cover. Allow mixture to simmer, covered, for 15 minutes or until all clams have opened. Pour over linguini and serve.
