Grilled Plantains anyone?
I fired up the barbie this weekend and threw some yellow plantains on the grill. They were sweet and yummy!! If your looking for a BBQ side that's a little different, I encourage you to try plantains. You want to look for the yellow plantain and make sure it has lots of black spots on it. The blacker, the better. It will ensure the plantain is at its sweetest. Cut the ends off, throw them on the girll with the skin still intact and cook for about 8 minutes (or until black) on each side. To test, just stick a fork in it and it should be soft. If you feel so inclined, you can also make a glaze. Mix about a cup or two of dark rum with about 1/2 cup of brown sugar and 1 tablespoon of cinamon. Boil until sugar is liquified. Let cool.
