bottom round beef
Anyone know how to cook one?? Mine is almost 2 lbs

I use it for pot-roast style recipes, or you can do some kind of shredded beef. It needs to be cooked for awhile at a low temp, so it is a good option for the crock pot, if you have one.
I would look up pot roast recipes to try to find one you like. I also recently made Italian beef sandwiches in the slow cooker using this cut.

If you have a crockpot pick up the mccormicks pot roast seasoning packet for slow cookers (usually in the isle with the gravy packets) and make it with baby carrots, quartered Yukon gold or red potatoes skin on and onion. Yummy! So good with pillsbury biscuits.
