Todays Recipe 7/11/06
Orzo Salad-great summer salad that will be a hit for BBQ's
1 lb Orzo
Container of Calamata Olives
Feta Cheese- I buy the container of Athenos Feta
3 large Red peppers
2 teaspoons of Lemon Zest
3-4 sprigs of fresh dill
3 tbsp of Lemon juice
2 cloves of garlic
1/4 cup of olive oil
Chop red peppers finely
Chop dill and garlic
Boil Orzo until Al'dente
Pit the Olives, and chop
Drain Orzo, and immediately transfer to bowl. Add lemon juice.
Put in the fridge for one hour.
Take out, and add dill, garlic, olives, lemon zest, peppers, olive oil and feta.
Mix and serve!
(Salt and Pepper to taste, of course)

This sounds awesome...although can you suggest another cheese to use...I'm not a huge Feta fan...

You can also use Gorgonzola, Blue cheese, or any cheese you like!!!
It should be a crumbled cheese though.
