Homemade Eggplant Parm

Does anyone make their own at home? I really want to make it myself rather than get it out. Can be breaded or not. Doesn't matter to me.

If I'm making it truly indulgent....yes, floured, egged, & breaded, then fried.
I can never order it out anymore, cause often it's done so cheap & thin, so dissapointing!

BUT if I'm being health conscious, we will grill it or bake it, then top with a little marinara & cheese.

Honestly, we don't mind it the healthier way, and satisfies the craving.

Yes, I make it at home regularly. Especially this summer because the eggplants in my garden have been growing like crazy!

I make mine and assemble in a casserole dish rather than individual stacks.

so i cut my eggplant, egg it, breadcrumb it, fry it. then once thats done, i layer sauce, eggplant, shredded cheese, sauce, eggplant, shredded cheese in the casserole and bake it for an extra 15-25 to get the cheese all melty and the sauce all over the eggplant.

i serve over spaghetti.

Yes. First I take all the slices, lay them out, and sprinkle salt on them. This draws out the bitterness. After an hour, you wipe the slices off-- water will have collected on top of them, drawn out by the salt.

Then I egg, bread, and fry them in a pan. I know this isn't healthy, but it is GOOOOOOD.

Then I layer the breaded slices with cheese and sauce, and just bake till it's all hot and melty.

If you really want to indulge further, add a little ricotta cheese between the slices too, & marinara sauce, & mozzarella cheese. Chat Icon

That is exactly how I make mine, except I soak them in salt water then put them on paper towels and set something heavy on them to make them very flat before frying. Then I basically make a lasagna but use the fried eggplant as the noodles.

I do mine a little differently. Since I can't find the breadcrumbs my mom uses here, I do this one. This guy has a great blog with lots of regional Italian food.

I follow this recipe but use my own sauce instead.
