Menu thread 9-1
OK, I need to get back into planning a menu and sticking with it. I'm attempting some of the meals I found on Pinterest! Here's what I'm thinking for this week:
Tonight- Lemon Garlic Orzo Soup (also attempting to cook for the this week's lunch and freezer- pumpkin white bean & beef chili, vegetarian black bean chili & fresh marinara sauce)
Mon.- shredded pork and pineapple tacos, black beans
Tues.- Greek style pork tenderloin, lemony rice pilaf & roasted broccoli
Wed.- Slow cooker beef barley soup (& sandwiches for DH because he claims souo isn't a meal lol)
Thurs.- Penne ala vodka with baby peas
Fri.- take out

Sure, I was going to try the Skinnytaste resipe but I'm replacing the ground turkey with beef. I'll post a review after I make it (which may be tomorrow). hoping it comes out good. I will not be telling DH there's pumpkin in there lol.

Thank you. Now that you say that, I think I actually made the ST one before, lol. I'm not big on ground turkey so I would probably like it much better with beef!

SO I chickened out and went with my old standby recipe for chili lol but I will def try the pumpkin in the near future and review

sun - out
mon - bowtie pasta with snow peas, heirloom cherry tomatoes, basil, fresh ricotta, and parm
tues - not sure yet - maybe grlled chicken over salad?
wed - dinner for rosh hashanah with parents
thurs - parents again
fri - prob take out or out, or a quick pasta
sat - husband's grandma's 85th bday party

Mon- Spare rib style sausages, pasta with broccoli, peas, and parmesan
Tues- Beef enchiladas, green salad
Wed- Lemon chicken, steamed broccoli, rice pilaf
Thurs- Leftovers
Fri- Meatloaf, baked sweet potatoes, spinach salad

Mon- chicken parm, pasta, salad Tues- turkey burgers, zucchini pie Wed- steak (for DH), sweet potato, edamame not sure what my protein will be yet Thurs-hotdogs, beans, salad Friday-maybe bbq maybe out

Monday: Pizza
Tuesday: baked whole wheat elbow pasta
Wednesday: Spanish Chicken and Rice
Thursday: usually pb&j's as we race out of the house for swim practice
Friday: Going to dinner with a friend

I'm doing Whole30, so my meals reflect that with some additions for the kids
Sat - whole chicken in the crockpot with grilled sweet potato crinkles and grilled bruseels sprouts
Sun - spice rubbed tri tip with grilled zucchini and yellow squash
Mon - coconut chicken, roasted broccoli & baked sweet potato with ghee & sea salt [with yellow rice for the kids]
Tues - Crockpot pulled pork over cilantro lime cauliflower "rice" with lettuce, tomato, avocado & freshly squeezed lime [real rice for the kids]
Wed - Pizza, salad
Thurs - Pesto salmon over sauteed spinach [over fusili for the kids]
Fri - Appetizer night!

Sun - Had a big brunch in the city, so just had leftovers for dinner
Mon - Tacos
Tues: Penne Rosa with Shrimp (from the "Back to her Roots" blog)
Wed: Slow Cooked BBQ Chicken with Apples (Emily Bites blog) with Goat Cheese Sweet Potatoes (also Emily Bites) and roasted broccoli
Thurs: Leftovers
Fri: New England Chowder with Shrimp (BHG magazine recipe this month) with salad and bread
Sat: TBD
