This is not necessarily a recipe but i buy the Holland House Marsala Wine and i add that to the chicken (and mushrooms) after it is brown.
It creates a delicious flavor and thickens up to become a sauce.

Marsala sauce recipe
Brown Flour, onions and butter with a little evoo
toss in mushrooms to coat and cook
hit it with marsala wine and cook until reduces down
splash it with a little cream or milk
Top with parsley

I'm curious what you're using this on since you're also vegetarian...I love marsala sauce but don't know what it would be good on! Clue me in, woman!

I buy Victoria Marsala Sauce at stop & shop. It's so good, as a matter of fact we had it for dinner tonight

. Oh it is for dh not me. He eats fish but no meat. I was going to make it with salmon. I can't think of a way to use it in a veg dish :(
