Meals for one

Please share your simple meals for one person.

I do have a DS but he is a vegetarian so he eats his own stuff, and I need ideas for myself.

I am not a huge fan of making big meals and portioning them out, it never works out for me.

Meals for one

I know what you mean! I hate making huge meals when dh is working at night and I'm only feeding myself!

These are some things that I make for myself:

Spaghetti with meat sauce - freeze the sauce and meat in small portions so you don't have to make it all at once

Tacos - buy the ingredients separately so you're not buying the meal box (pack of tortillas, a thing of salsa, container of the seasoning you can reuse, etc)

French bread pizzas - you could both eat those!

Shrimp and pasta with white wine sauce - get frozen shrimp and prechopped garlic so you can use multiple times

Frozen battered fish fillets, broccoli, Mac and cheese

Can of soup and grilled cheese

Hot dogs and some kind of side

Soup and salad

Paninis or sandwiches

Cream of chicken soup (I add a rotisserie chicken) over egg noodles or rice
