broiling a London Broil
How long and what temp do I broil a London broil for?? Is there any secerts to not making it chewy??? lol sorry never cooked a steak in the oven before! lol
should I put the oven on broil or bake 350?

I marinate mine to give it more flavor. - equal parts olive oil, soy sauce, tomato juice and brown sugar, chopped garlic and a couple dashes worchestershire. Boil the marinade to make a dipping sauce. (This recipe is from a LIF poster, but I forgot who from. DH loves this marinade !)
I broil it on a rack in a baking sheet for about 7 minutes per side, a little longer if it is a thick cut, then let it rest before I cut into it.

i poke small holes in mine and marinate before and while cooking in Dai Dai garlic sauce found in the asian section if any supermarket. I put a foil tent w while it cooks and it comes out soft. Get a lot of requests for this, my mom's recipe. I bake it though, do not broil it.

I make London broil often. I marinate it in olive oil, soy sauce, honey, tons of chopped garlic, fresh rosemary, coarse black pepper.
It definitely is a cut of meat you want to marinate at least 8 hours if not overnight/24 hours.
I always make shallow cuts in the meat (about a half inch deep) in a cross hatch pattern to help the marinade to flavor and tenderize the meat.
I think London broil is best done quickly on a high heat, so I either broil it (my broiler is 500 degrees) or grill it in the summer.
Another key is NOT to overcook it. It usually just needs 5-8 mins per side, depending on the thickness.
Let it rest for about 15 minutes or so before you slice it, otherwise all of the juices will run out and the meat will be dry.
How you slice it is REALLY important with this cut of meat. You have to cut across the grain (you'll see the lines in the meat that are the "grain" of the meat) and slice it very thinly, as thin as you can on the diagonal.

if you have the time top marinade over night that is best but before you marinade it, sprinkle it with kosher salt...that helps to tenderize the meat
we stick our on the grill pan for 2 minutes on each side and then stick it in the oven on 350 for maybe 6 minutes depending how thick it is dh likes grill marks on his meat even if we arent bbq-ing
