Side dishes - need to make in advance
We are having Christmas dinner - thinking of serving at 4pm. We are going to have 22 people - kids and adults. The night before my SIL has a big Christmas Eve party - we get home past midnight. Our 3yo and 5yo will be awake early and I don't want to spend all day in the kitchen.
I am planning on serving prime rib and maybe ham. I need to make some side dishes that I can make in advance. I am willing to try new dishes. Any recomendations?

Re: Side dishes - need to make in advance
I make my sweet potato casserole and Pioneer Woman's mashed potatoes in advance. Just pop them in the oven 1/2-1 hr. before we want to eat.

Side dishes - need to make in advance
I make soup and freeze. Then the day before Xmas eve or even xmas eve, I pop in the fridge to defrost.
one year I put the mashed potatoes in the crock pot to warm up. Spinach pie can easily be warmed up, too.

Re: Side dishes - need to make in advance
Twice baked potatoes... always a hit and are kind of fancier than just mashed for a holiday dinner.
I like Giada De Laurentiis's Baked Mashed Potatoes with Parmesan and Bread Crumbs. Flavorful and can be assembled in advance and just baked before serving.
I often make a Carrot Souffle that is GREAT with roasted meats. I have posted the recipe on here a few times if you search for it. Everyone always LOVES it, even those who swear they don't like carrots. It is a sweet dish, almost tastes like a dessert!

Ina Garten's sausage stuffed mushrooms. So good and filling and you can make them a day ahead, stuff them, and just let them come to room temperature before baking off.

Side dishes - need to make in advance
This isn't necessarily an "in advance" thing but it takes just a few minutes - boil string beans until crisp tender, dress with some some evoo or butter, s&p, garlic powder or if you want, you can saute garlic in evoo and pour that over the string beans.
I also saw a rachel ray holiday special today where she roasted a pan of sugar snap peas - just peas, s&p, evoo. would be great with some minced mint, too. So also not really in advance, but takes all of 5 minutes of active time.

also you can roast carrots and parsnips - roast with evoo, s&p, and make a glaze of oj, maple syrup, minced shallot, soy (cook it until very reduced). toss the veg in the glaze after they are cooked. then just reheat in the micro when you need them.

Mashed potatoes Mac n cheese - you could make it a nicer side fish by using different cheeses / adding in ingredients. I love Gouda! Eggplant parm / lasagna Any kind of casserole would reheat well Ina garten Provençal French beans - so good!

Re: Side dishes - need to make in advance
I prepare scalloped potatoes the night before. I layer baking dish with thinly sliced potatoes, one chopped onion, one minced shallot. Poor heavy cream or whole milk over and dot with butter, season with s&p. I sometimes will also lightly sprinkle with fresh chopped rosemary and thyme. Cover with foil and refreigerate. When ready to bake, remove foil and bake at 350 until tender and lightly browned on top.

This sounds great! It doesn't get mushy sitting overnight at all? I always get nervous to prepare things like this in advance. This would be perfect for my Christmas dinner.

No, not mushy at all since the potatoes are raw.

We did something similar for Thanksgiving. My mom microwaved the sting beans (you could also steam) and then salted them & sautéed them quickly in olive oil. You could also add garlic, or even steam the string beans in advance & just warm in them in the oil.
