Chicken Breasts/Cutlets
I took out cutlets for dinner and would love if you could share an idea for tonight.
I am sick of cutlets in the oven with breadcrumb and sick of marsala.
Thinking maybe Spitini or rollatini?
Ideas would be MUCH appreciated.

how about a cordon bleu? bread the cutlets and put a piece of ham and swiss cheese on them and roll them up and stick a toothpick in them.

When I get bored of those I usually wind up doing a stir fry or with pasta and alfredo sauce.
I've been wanting to try this recipe, too, but I don't have almond flour- I was just going to substitute bread crumbs for almond flour.

my go to is Ina's Chicken Piccata or you can do a bruschetta I like to also stuff them with ham, mozz, basil and then dip them in egg and bread them. Then I bake them. I usually do a chicken stock, garlic, lemon sauce on the stove top to top them off. I also love Giada's baked chicken and pastina dish

Baked Garlic Brown Sugar Chicken
Ingredients: 4 boneless skinless chicken breasts 4 garlic cloves, minced 4 tablespoons brown sugar 3 teaspoons olive oil
Instructions: Preheat oven to 500°F and lightly grease a casserole dish. In small sauté pan, sauté garlic with the oil until tender. Remove from heat and stir in brown sugar. Place chicken breasts in a prepared baking dish and cover with the garlic and brown sugar mixture. Add salt and pepper to taste. Bake uncovered for 15-30 minutes.

Thin and pound your cutlets and stuff them with your favorite fillings. Sometimes I roll them up with a slice of ham and Swiss or spinach, mushroom and mozzarella. I toothpick it to stay roll it in egg batter mix and then bread crumbs. Sometimes I just layer the cutlets with mozzarella, prosciutto and asparagus on top in a wine franchise kind of sauce.

Mix thawed frozen chopped spinach, feta cheese, some garlic powder and a little mayo to bind, roll it up in the flattened breast and cook in a pan or bake. Delish!

I just threw mine in the crockpot with brown sugar, soy sauce, apple cider vinegar, salt, pepper, ginger, garlic.

i wrote down ALL of these ideas. ALL Sound amazing! Thank you so much!
this is what i ended up doing!
I made Chicken enchiladas:
saute cream cheese and diced tomatos in a skillet.
add that sauce to cooked chicken (I used diced chicken grilled in sliced onion and adobo, you can use taco seasoning instead)
I put a bunch in a tortilla, wrapped it up, put face side down in pyrex dish.
I lined pyrex with enchilada sauce, put tortilla down, then put some more enchilada sauce on top and added mexican cheese. Baked at 350 until bubbly. (10 mins or so)
you can also add green chiles to this and or re fried beans inside or on side. YUM
