Todays Recipe 7-25-06

Panko Crusted Chicken Cutlets

I am actually making these right now. LOL


1 bag of Japanese panko bread crumbs
4 Chicken Cutlets, or as many as you need, on the thin side
4 large eggs
1 teaspoon of honey
1/2 cup teriyaki sauce


Mix eggs, honey, teriyaki sauce in a bowl. Dip chicken cutlets in mixture, and coat with panko breadcrumbs. Fry and thats it! You will not believe how amazing they taste. Kind of like Hawaiian flair chicken cutlets.

I am serving Flambe'd plaintain as a side.

2 large plantain
1/2 cup Malibu Rum
1/2 stick of butter or margarine. I use Olivio.
Not even a teaspoon of sugar.

Saute plantain in butter until semi soft and browned, add sugar and mix. Next add rum, and let alcohol burn off.

Serve and enjoy with a nice glass of white wine!

Thank you so much for posting this- I was just talking about making chicken with panko with someone the other day- I cannot wait to try this- it sound soooo delish!

This sounds so good! Have you ever tried baking this dish? Do you think the results would be decent? I cannot eat anything fried or sauteed....

Hey Baby!


you can definately throw it in the oven. Let the cutlets cook at 325 for about 30 mins, then broil them on each side for 5 mins each, to get the panko nice and crispy.
