Give me a good recipe to impress ILs!
I'm having them over for dinner on Tuesday.. my MIL is a fantastic cook! I need something I can make that will impress her. I'm good at lasagna but it's her recipe so I don't want to make it. Going for something Italian and quick, I get out of work at 5 and will have them at the house at 7! Help!
Update: I made shrimp scampi with pasta, Caesar salad, and garlic bread. It must've been delish because everyone had seconds and I had none leftover. :) Thanks for all the amazing recipes! I'm going to pin all of them for the future!

Give me a good recipe to impress ILs!
I'm partial to a creamy penne ala vodka with onions, prosciutto and mushrooms (can omit if nobody likes) Ceasar salad covered in parmesan and homemade croutons Shrimp oregenata
Or I just had my parents over the other night and did a parmesan rissotto with seared scallops and asparagus bundles wrapped in prosciutto...nothing but clean plates. We had steak on the side too for the kids.

Give me a good recipe to impress ILs!
Shrimp scampi over angel hair pasta is quick and easy. You can serve it with fresh bread and salad.

Love this recipe and you could make the sauce tomorrow and all you would have to do is make a salad on Tuesday. It makes a lot of sauce, so you could cut it in 1/2 if it is just the 4 of you or freeze the leftovers for another night.

Shrimp scampi Or penne ala vodka is easy.
I make a good roasted bruschetta...I serve it as an appetizer, BUT also learned that it's awesome after it sits a day or 2 or 3, then when heated I add some kalamata olives & shrimp & then toss with pasta. So easy, so full of flavor.

Smothered Chicken <-- I made twice baked potatoes and garlic bread as sides.
Angel Chicken Pasta
Chicken Madeira (Cheesecake Factory copycat recipe) <-- I served this with mashed potatoes and a side salad.

Do you have a crock pot? I throw chicken cutlets, a container of salsa, frozen corn, black and red beans, a can or two of tomatoes and onions with salt, pepper, garlic powder, and any other spices you want into it. Put it on low when you leave for work. By the time you get home, you should be pretty good to go. If not, you can turn it on high for an hour. Then just put two forks in it and shred all the chicken. I serve it over rice.

Give me a good recipe to impress ILs!
Risotto with mushrooms and asparagus and roasted chicken - get a 4 pounder, season and butter it, melt some butter and oil in a large skillet and cook the bird for 10 minutes on each side on the stove (breast side down first) then, still in the skillet, put in oven for another 45 min or so (20 min on each side) basting periodically, oven at 375 (I think that's what I put it to).... It comes out amazing, I typically put some onion and lemon (cut up) in the center before putting in the oven - which can increase cook time slightly.
