Re: Menu thread

I am also trying to avoid the supermarket this week. Don't want to deal with crazy snow hoarders, but also, I have a fair amount of stuff in my pantry and a few things in the freezer/fridge I can use up.

Saturday - DH made chicken cutlet parmesan, and we have some leftover chicken.

Sunday - We were at a Super Bowl party (and were sent home with some leftover hero)

Monday - Snow day means comfort food. I had some beef stew meet in the freezer that I am defrosting, and I have some veggies to use up in the fridge, so going to make a stew (I think Taste of Home's Italian Beef Stew).

Tuesday - I saw a recipe for pasta with turkey sausage, wine, and spinach. Have turkey sausage in freezer I can defrost and some baby spinach in the fridge to use up, so will probably make this.

Wed - Maybe leftovers

Thursday/Friday - TBD - One of my goals today is to take stock of what's in the cabinets, fridge, etc. and clean them out a bit, so we'll see what I come up with!

Also trying to clear out my fridge/freezer/pantry. I only need a few essentials from store this week. With all the snow expected I am sure crazy people will be out in the supermarket in full force!

Wed: skinnytaste greek meatballs with cucumber salad

Thurs: chicken fajitas with rice and salad

Fri: spaghetti bolognese
