Honestly, the one from the side of the Ronzoni elbows box is one I've tried a few times and it's always been a big hit.

I'm pretty sure I must have read about it from here because I don't buy Ronzoni pasta so I would have never found that recipe otherwise. Chat Icon

eta: It's also a very simple recipe

Re: mac and cheese

This is the recipe I use, everyone raves about it when I make it:

Macaroni and Cheese

Ingredients

* 1 1/2 cups uncooked elbow macaroni
* 1/4 cup butter
* 2 tablespoons all-purpose flour
* 1 teaspoon mustard powder
* 1 teaspoon ground black pepper
* 2 cups milk
* (2) 8 oz packages cabot cheese, shredded
* 1/4 cup italian seasoned panko

Directions

1. Preheat oven to 400 degrees F (205 degrees C). Butter a 1 1/2 quart casserole dish.

2. In a saucepan, melt the butter over medium heat. Blend in the flour, mustard powder, and pepper until smooth. Slowly stir in the milk, beating out any lumps. Add the shredded cheese, and stir constantly until the sauce is thick and smooth.
3. stir noodles into the cheese sauce. Transfer the mixture to the prepared casserole dish. Sprinkle panko over the top.
4. Cover the dish, and bake for 20 to 25 minutes, or until sauce is thick and bubbly.

*for the cabot cheese I usually use one brick of monterey and one brick of yellow cheddar and shred it in the cuisinart but you can use any combination you like. I also run the dish under the broiler for a few minutes to get the panko nice and crispy.

Re: mac and cheese

Skillet Creamy Macaroni and Cheese
Ingredients

3 1/2 cups water, plus extra if needed
1 (12-ounce) can evaporated milk
12 ounces (about 3 cups) elbow macaroni
1/2 teaspoon salt
1 teaspoon cornstarch
1/2 teaspoon dry mustard
1/4 teaspoon hot sauce
8 ounces cheddar cheese, shredded (1 1/2 cups)
8 ounces Monterey Jack cheese, shredded (1 1/2 cups)
3 tablespoons butter, cut into small chunks
Ground black pepper to taste

Directions

Bring 3 1/2 cups water, 1 cup of the evaporated milk, the macaroni, and 1/2 teaspoon salt to a simmer in a 12-inch nonstick skillet over high heat. Cook at a vigorous simmer, stirring often, until the macaroni is tender and the liquid has thickened, 9 to 12 minutes.
Whisk the remaining 1/2 cup evaporated milk, the cornstarch, mustard and hot sauce together in a small bowl, then stir into the skillet. Continue to simmer slightly thickened, about 1 minute.
Off the heat, stir in the cheddar and Monterey Jack, one handful at a time, adding water as needed to adjust the consistency of the sauce. Stir in the butter and season with salt and pepper to taste. Serve immediately.

My notes.....I use a whole lb of cavatappi pasta and just added more water to keep it creamy and I saved some cheese to sprinkle on the top, I also sprinkled it with a mixture of panko breadcrumbs and crushed cheddar goldfish and then baked it on top to get crispy!! Enjoy! :)

Re: mac and cheese

Most important is to NOT use pre-shredded cheese. The cheese sauce will never get smooth and creamy for you. They add flour (or cornstarch) to prevent the cheese from clumping, and that throws off the whole milk/butter:flour:cheese ratios, and will never work. Trust me...I tried to be lazy and ended up with a flop!

maybe thats why. I haven't tried it in a really long time but I want to master it lol. We haven't been liking the pre shredded anyway. We have been buying the blocks of cabot and cracker barrel so much more flavor. thanks for the tip

Re: mac and cheese

I have a really easy crockpot one and its delicious!
It serves 2-3 but I always double.

1 1/2 c elbow macaroni
1 1/2 c chicken broth
1 c heavy cream
3/4 c shredded cheddar cheese
1/2 c shredded mozzarella cheese
1/4 c shredded parm cheese
1/4 teaspoon of kosher salt

Combine it all in a crockpot on high and leave it for 2 -2 1/2 hours :)

YES!! I make the recipe off the ronzoni cheese but use the cabot "seriously sharp" and people go nuts over it. D nt use bagged cheese, grate your own. It makes a difference
