banana bread recipe

anyone have a banana bread recipe. using 2 bananas n no nuts?

I use frozen bananas (defrosted) cut the oil to 1/4 cup, cut the sugar to 2/3 cup and make my own buttermilk (1 tablespoon lemon juice, just under one cup milk, stir together and let sit for 15 minutes until it gets thick)
Nuts are optional. I've made this without and with walnuts.

DH and I can never eat a whole bunch of bananas before they get overripe. They freeze really well.

Butter, for greasing pan
1 cup flour, plus more for pan
¾ tsp. baking soda
¼ tsp. kosher salt
1 cup sugar
½ cup canola oil
? cup buttermilk
1 tsp. vanilla
1 egg plus 1 egg yolk
2/3 cup chopped pecans
3 very ripe bananas, mashed

1. Heat oven to 350°. Grease a 9" x 5" x 2¾" loaf pan with butter and dust with flour; set pan aside.

2. In a large bowl, whisk together flour, baking soda, and salt; set aside.

3. Whisk together sugar, oil, buttermilk, vanilla, egg, and egg yolk in a medium bowl until smooth. Pour wet ingredients over dry ingredients and whisk until just combined. Add pecans and mashed bananas and whisk gently to combine. Pour batter into prepared pan and bake until golden brown and a toothpick inserted in the middle of the loaf comes out clean, 60–65 minutes. Let cool for 30 minutes before slicing and serving.

Ingredients
1 1/2 cups flour
3/4 cup sugar
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 egg (or 2 egg whites)
3 bananas, mashed
1/3 cup applesauce
1 teaspoon vanilla
Brown sugar (optional)

Directions
1. Preheat oven to 350 degrees. Lightly grease an 8"x4" loaf pan.

2. In a large bowl, stir together all dry ingredients - flour, sugar, baking powder, baking soda and cinnamon. Add wet ingredients to the dry - egg (egg whites), banana and applesauce. Stir until combined.

3. Pour batter into prepared pan.

4. Optional - sprinkle brown sugar and cinnamon on top.

5. Bake in oven about 40-45 minutes.
