Menu Thread - 11.2.14

Sunday- I took my nephew to see Cinderella on Broadway, we ate at Applebees.

Monday- Buffalo chicken spaghetti squash

Tuesday- Grilled chicken topped with spinach, tomato and mozzarella

Wednesday- Honey Garlic Teriyaki Shrimp

Thursday- Working late, we'll probably just order something.

Friday- Skinnytaste Chicken Marsala

Saturday- Shepherd's Pie and biscuits

I didn't get to a few things last week so they're back on the menu again.

Sunday- homemade pizza, salad

Monday- Slow cooker pork loin with balsamic glaze, mashed potatoes, brussel sprouts sauteed with bacon and walnuts

Tuesday- Tacos with all the fixings

Wednesday- Tostadas with taco leftovers and rice and beans

Thursday- Made reservations at Fifth Season for restuarant week

Friday-Buffalo turkey burgers, green beans, homemade sweet potato fries

Saturday-??

Sun: out for dairy queen while shopping in the neighborhood

Mon: leftovers

Tues: sausage, peppers, onions and potato bake

Wed: skinny taste sicilian rice ball casserole

Thurs: unstuffed cabbage or peppers

Fri: english muffin pizzas

Sat: out to eat

whats buffalo chicken spaghetti squash?



It's a meal I make that's based on one I found online.

I bake the spaghetti squash for 45 minutes at 350. Once that's done, I put it to the side and sautee cut up chicken breast in Frank's hot sauce.

In a bowl, mix the chicken with the spaghetti squash and 2 tablespoons of light blue cheese (or ranch) dressing. Split the mixture in half and transfer it back into the squash shells, top each shell with 1/4 cup shredded mozzarella and bake until the cheese is melted - about 5 minutes.

Sure! It's a Skinnytaste recipe but I top the chicken breast with a slice of tomato instead of roasted red peppers. Chat Icon

Skinnytaste Grilled Chicken with Spinach and Mozzarella

It's also delicious with the peppers, but DH prefers tomatoes.

Sun - Turkey burgers on whole wheat buns, seasoned roasted potatoes and glazed carrots.

Mon - Pretzel chicken tenders with 4 cheese bowties and French beans.

Tues - Baked ravioli with garlic bread and salad.

Weds - Pierogies with ???

Thurs - Leftovers.

Friday - Crockpot pulled pork, coleslaw and French fries.

Sat/Sun - Out.

That looks so good! Definitely trying it next time I buy spaghetti squash.

Hmm- Franks isn't very spicy at all and the ranch or blue cheese should cool it down a bit.

APT910, you gave the basic recipe but how much Franks should I use, I take this is enough for two people. It is one large bottle or the small??

It's hard for me to give an exact recipe because I pretty much just eyeball everything and taste as I go. Lol if say I probably use about a cup of hot sauce and 1/4 cup of blue cheese. The recipe is for 2 people.

Here's the original recipe that I found online:
