Mashed potatoes
I use Yukon Gold. And always heat the milk before adding to the potatoes, it helps prevent gumminess of the mashed potatoes.

Yukon Gold or Russet. I've never heated the milk first. Will try that next time!

Mashed potatoes
Yukon Gold and I dry out the potatoes in the pan for a minute or two. Mix in warm heavy cream, a stick of butter, good sea salt and freshly cracked black pepper.
