I made the best tasting vegetable lasagna and proud of it
mine almost never comes out, but it did this time, I brought to work Friday to share with my co-worker,

I changed it a bit, I did not use eggplant instead I added shredded carrots, instead of dicing everything I wanted different textures (and a bit lazy) I shredded the zucchini, and diced red peppers not green and squash.
I read the recipe wrong so I added the spinach in the pan to sauté not in the cheeses, and added all the parm cheese to the ricotta (oops) so had to added extra on top.
I also layered it wrong :( so my top layer had ricotta, sauce and mozzarella.
