Polenta

I have it stuck in my head that I want polenta. I'm in the process of making pulled pork in the slow cooker for tomorrow's snowy day. Do you prefer creamy polenta or polenta cakes? Any great recipes I should try?

I like creamy polenta myself and I think it would go really nicely with pulled pork!

It's so funny you write this....I made a new recipe for an Italian inspired pork & it called for polenta. But I've never made polenta, so I roasted some baby potatoes.

Is polenta hard to make?

Not at all. You boil water or broth, slowly whisk in the polenta and simmer for 25-30 minutes. I added a bunch of Parmesan, Pecorino, and enough jalapeño hot sauce to give it a kick. I would have done chopped jalapeños, but I didn't have any in the house. I am going to bake the leftovers into polenta fries tomorrow.

When you first baud the polenta it's creamy. I like it best like that. But if that's not your thing, you can pour it into a baking dish and put it in the fridge. Once it cools, you can cut it into squares or long rectangles. You can then either pan fry it or bake them off in the oven so they crisp up. I honestly like polenta in all forms.
