Menu thread
I'm finally feeling motivated enough to start planning meals! I have to say it's the fact that I started this homechef delivery thing! I don't order every week but it has gotten me excited about cooking again. Here's my plan for the week:
Tonight- Homemade Gen Tso's chicken with jasmine rice and sauteed snap peas and broccoli
Mon.- Spaghetti squash with sauce and meatballs
Tues.- Marinated grilled skirt steak, mashed cauliflower and roasted asparagus
Wed.- Lemon chicken with sauteed spinach
Thurs.- TBD
Fri.- Out

Sunday: chili lime fried flounder with pepperonata Monday: grilled chicken over greek salad + pita chips and hummus Tuesday: chicken tortilla soup w/avocado Wednesday: penne alla vodka Thursday: pizza Friday: chicken and veggie dumplings w/spicy dipping sauce

I need that chili line flounder recipe!!!! That sounds delicious! Sunday: in laws Monday: left overs (working late) Tuesday: cheeseburger casserole Wednesday: Asian chicken and rice Thursday: left overs Friday: beef tacos Saturday: probably order out with my parents

It definitely feels good to have the holidays over and get back to planning.
Sunday- pizza Monday-lentil soup and baked potatoes which I didn't get to make last week. Tuesday- ground chicken tacos, guacamole, corn Wednesday- pioneer woman's steak bites, fries, green beans Thursday- leftover soup Friday-burrito bowls with leftover taco meat, beans, and fresh veggies Saturday- chick pea and sweet potato Buddha bowls

Sun- baked tilapia, orzo, roasted butternut squash
Mon- ST roasted balsamic chicken and veggies, saffron rice
Tues- shrimp, pasta, spinach
Weds- stuffed peppers with quinoa and ground turkey
Thurs- leftovers
Fri- freezer leftovers

Menu thread
Sunday - we were out at a friend's Monday - lasagna roll ups with spinach and artichokes Tuesday - chicken cutlets / mac n cheese Wednesday - was going to make tacos but i think i'll switch to cheeseburger casserole! Thursday - leftovers Friday - spinach ravioli
need to figure out veggies i'm getting bored with the usual. Made mediterrean quinoa for myself that will be a few meals.

Can you share details about the Buddha bowl?
We should all try to get back into the habit of linking recipes when possible. I loved looking through those in the past and always found some to save.
As for the Buddha bowls, we've been trying to incorporate some vegan meals into our menu. I'm most nervous about how this one will go over but I'm going to give it a shot. It's from minimalistbaker which I usually like. It's a bunch of roasted veggies, sautéed chickpeas, and a maple tahini sauce and supposed to be ready in 30 minutes. recipe

Sun: Sunday sauce with meatballs and sausage
Mon: Leftover chicken pot pie (from Saturday) & chicken marsala for DH
Tues: Tacos with all the fixings
Wed: Pasta with creamy pesto sauce & Italian bread
Thurs: Personal pizzas
Fri: Leftovers
Sat: Breaded lemon tilapia, buffalo cauliflower, and wild rice
