Homemade Granola Bars
Does anyone make their own granola bars? I am looking for a really good recipe-preferably with Peanut Butter.
TIA!

Re: Homemade Granola Bars
I do! I usually just mix in a crumbled rice krispy cereal or brown rice cereal, chopped roasted unsalted almonds, pumpkin seeds, flax seed, chopped up dried cranberries, chopped dried apricot, cinnamon and mix together with some honey or agave nectar until sticky. I put parchment paper on a baking sheet and spread the mixture onto the baking sheet and bake at 325 for about 20 or so minute. Let them cool completely and then cut into squares or bars. I store them in the fridge for about 2 weeks. You can really add any combo of nuts or dried fruit.
You mentioned you would like pb recipes and here is one I really want to try.granola bars

Re: Homemade Granola Bars
This one does not use flour so they don't stick together as well. I keep them in the fridge so they hold together better. I also use succanat instead of brown sugar.

Granola bars
I don't know if you tried it already, but coconut palm sugar is a great substitute for brown sugar ( with a low glycemic index and lots of nutrients)

Re: Homemade Granola Bars
These are also yummy! They get soft if brought to room temperature so keeping them in the fridge with parchment in between would work best.

Re: Homemade Granola Bars
I made these over the weekend. I actually messed up the recipe and only put a 1/2 cup of peanut butter instead of 1 cup but they are soooo good! Thanks for the link!
