Because if I post it, I’ll cook it!

Sunday: out
Monday: buffalo chicken quesadillas, roasted street corn
Tuesday: chicken teriyaki with broccoli and riced cauliflower
Wednesday: chile lime salmon with spicy sautéed spinach
Thursday: mini chicken meatballs with Trader Joe’s pepper jelly, roasted brussels sprouts
Friday: shrimp and chorizo over Spanish rice
Saturday: harissa chicken with chickpeas and tzatziki

Sunday - black bean soup, homemade herb focaccia
Monday - lasagna
Tuesday - paprika chicken with peppers and zucchini over rice
Wednesday - buffalo chicken burgers, carrots and celery, fries
Thursday - buffalo chicken burgers, sweet potato fries, salad
Friday - eggplant parm, steamed broccoli
Saturday - something with shrimp but I don't know what yet

Monday - London broil with mushrooms and onions and cilantro rice
Tuesday- chicken cutlets and Brussels sprouts
Wednesday - steak, roasted potatoes and asparagus
Thursday pasta with garlic bread
Friday cheeseburger sliders and red potatoes

Dh is home and cooking this week

Tuesday - Peanut thai chicken over Cauliflower rice
Wednesday - Leftovers
Thursday - Turkey Meatloaf, cauliflower mash, corn on the cob
Friday - Chicken Chili
Saturday - left overs

Tues: Tacos

Wed: TJ's orange chicken with broccoli and white rice

Thurs: TJ's penne arrabiata with TJ's grilled eggplant and peppers, and asparagus spears

Fri: lemon rosemary tilapia with roasted potatoes and broccoli

Sat: Mommies Night Out

Sun: Mini homemade pizzas

Mon: Rigatoni with chicken sausage and chopped spinach

Mon: penne with sauce and meatballs
Tues: vegetarian chili & I made a batch of skinny taste Brussels sprout and cauliflower soup
Wed: grilled chicken for dh and I and grilled cheese for the kids with soup from the night before
Thurs: chicken sausage, broccoli, roasted sweet potatoes
Fri: chicken soup
Sat: takeout sushi
Sun: out

I did good so far but had to make some adjustments. Instead of meatloaf, I did a crockpot turkey chili for today and tomorrow will be burgers for DS and I (butter lettuce buns for me).

We did pretty good this week:

Monday- Chicken Piccata

Tuesday- Tacos in shells for me, over a salad for DH

Wednesday- Keto approved chicken parm (if I told you what this was breaded with instead of breadcrumbs you'd puke so I won't) But it tasted good and I really could not tell the difference!

Thursday- Crockpot New England clam chowder

Friday- take out of some kind

Saturday- out to dinner

Sunday- going to a party

Lol. It's "breaded" with ground up pork rinds! Chat Icon
Keto is all about high fat and little to no carbs.
While I don't do it myself, it's easier for dinner if we eat the same main dish.
I gag at the thought of pork rinds and when he told me about this recipe I thought he was nuts, but when I tasted this it honestly tasted like regular chicken parm once the chicken was fried up and then the sauce and cheese was on it.
It sounds super gross...but it's not bad at all!

Ha ha it sounds good to me but I grew up eating pork rinds. Interesting, thanks for sharing. So in keto you can’t use Panko - correct?

Correct. No bread crumbs or bread products of any kind.
And it IS kind of tasty I must admit!!
