Kid-friendly veggie recipes?

Mac n cheese with butternut squash or pumpkin
Mashed cauliflower
Zucchini fries
Veggie cheeseburgers

And for quick meals, Dr. Praegers makes these veggie bites shaped like dinos and stars. The have spinach, kale, broccoli. If I get home late I'll give those with a side of fruit and call it dinner.

I forgot about those Dr. Praeger bites! We liked the spinach ones.

I second the butternut squash ideas. I roast and puree it and store cubes in the freezer. Add one or two to mac n cheese, pancakes, sauces,etc. My super picky 5yo doesn't notice at all (and even when she sees me add it she doesn't complain).

I try giving them raw as a snack but play with the cut to figure out how they'll eat it. For carrot I've done sticks, really thin discs, spiralized, etc. My 3yo will try most raw veggies if she sees me snacking or prepping them.

You can do fritters with different veggies and a little cheese. If they eat fried rice you can make that with tons of veggies (I add peppers, spinach, Napa cabbage, carrots, and peas). Spiralize zucchini or sweet potatoes to make noodles, dd liked the sweet potatoes with peanut sauce. My 3yo likes broccoli roasted so it's a little crispy.

We do smoothies occasionally but I used to do those a lot. I add a lot of spinach and find that berries totally mask the color and flavor.

Kid-friendly veggie recipes?

My boys love straight up veggies, my girls, not so much. I hide veggies in meatloaf, pancakes, muffins, marinara sauce, mac & cheese. They like the Dr. Praeger's sweet potato bites, & the broccoli bites. Sometimes I can get them to eat veggies if I put them in scrambled eggs mixed with cheese.
