Real easy chicken or veggie crockpot recipes
Going back to work soon and won't have time to do any prep work with the hours. Want to put it in the pot and hope it's done when I get home.
Any ideas? I don't like red meat so chicken or veggies. Something good for the kids too.
Btw... Had my crockpot for a few years and it's still in the box never touched. Now with two kids and working full time I need something good and easy
DH isn't into spicy.

It's good, simple, and quick.
Balasmic Chicken 4-6 boneless, skinless, chicken breasts 2 14.5 oz can diced tomatoes (not drained) 1 onion thinly sliced (Not chopped) 4 garlic cloves (sliced) 1/2 cup balsamic vinegar (I use a little less than 1/2 cup) 2 tbsp olive oil 1 tsp each: dried oregano,basil, and rosemary 1/2 tsp thyme ground black pepper and salt to taste
Preparation:
Pour the olive oil on bottom of crock pot place in chicken breasts, salt and pepper each breast put sliced onion on top of chicken then put in all the dried herbs and garlic cloves pour in vinegar and top with tomatoes
Cook on high 4 hours, serve over pasta.
(I did it with 5 breasts and then I did it with 3. The one with 5 was a little watery. It's still super easy, so I don't mind)

I did a whole chicken a few weeks ago and then made chicken soup from the leftovers.
I seasoned the chicken the night before, and put in the fridge overnight. In the morning, put it n the crockpot on low ( no water or liquid). Onions and garlic in top, set it on low for 9 hours. Was DELISH! You could add whatever veggies you want.
I then took the leftovers and made chicken soup overnight in the crockpot. Three nights worth of dinner and fresh chicken stock to freeze.

Chicken cattitore (sp?--I'm Irish! )
Whole chicken, cut up Sauce (jarred or home made) about 6 cups 3 Green Peppers, cut up 1 large Onion, cut up Baby bella mushrooms, 1 pkg whole
on low for 6 -8 hours.

I'm a new crock pot user as well. I have found some great easy recipes on skiinnytaste.com and crock pot girls. I recently made bbq chicken .. so easy and delicious. Also check out weelicious.com lots of kid friendly recipes. they have a crock pot lasagna recipe that I am going to try soon..

Crock Pot Chicken Curry with Apple, Banana, and Tomato
This was very easy to make. The sweetness of the apples, bananas and coconut milk went so well with the earthy flavors of cumin and curry. The spice from the jalapeno imo made the dish AMAZING!!!
•2 lbs. boneless, skinless chicken thighs, chopped into bite-sized pieces. ( I used chicken breast) •1 jalapeno pepper, seeds removed and diced •1 banana, sliced •1 apple, sliced but not peeled •1 1/2 cups diced tomatoes (I used a can of diced tomatoes) •1 large onion, diced •4 cloves garlic, chopped •2 1/2 tablespoons curry ( I used 4 tablespoons) •1 teaspoon cumin (I used 1 tablespoon) •1 teaspoon salt •2-3 bay leaves •1/2 cup white wine •1 cup coconut milk (you can use the whole can if you like, which is what I did. I also used lite) •2 tablespoons of flour •4 cups cooked rice or naan (I used basmati rice)
Directions:
1.Spray your crock pot with Pam. Dump everything but the flour into your crock pot and stir.
2.Sprinkle flour on top of everything and stir to incorporate. Cover and place on high for about 2-3 hours or on low for 6 hours.
3.Serve with rice, naan or veggies
