Menu Help
Having another couple over for lunch and dinner. for dinner we are doing a make your own taco/fajita bar - so steak, chicken and all of the toppings/sides. But for lunch we were thinking of something more simple or like apps in place of a big meal. Any ideas? Nothing seems just right... thought maybe you guys could spark some ideas.

I think apps are more fussy.
Keep it simple with sandwiches and salads, or brunch like with a breakfast casserole and a fruit salad.

Get a cold cut platter with breads and rolls, etc and make your own sandwiches with side salads like potato, macaroni etc
Or tuna salad, chicken salad, egg salad, etc

I would probably just get some rolls and cold cuts and make a cold pasta salad to go with it. Another idea would be to treat lunch more like brunch and do a quiche with fruit salad, maybe some mini croissant sandwiches. I wouldn't go crazy for such a small group if you're doing a big dinner with two proteins too.

I agree with the others, keep lunch simple and light. I also would do some nice sandwiches along with fresh homemade salads which are so easy to make. If you head over to my blog, I have a great recipe for potato salad (2 different ones) and coleslaw which are both easy to make.
Another nice idea for a salad is to buy seasoned fresh mozzarella balls, fresh tomatoes and fresh basil. Boil mezze penne pasta and add to diced tomatoes, fresh basil and cheese. Toss the salad with the seasoned olive oil from the cheese, add salt and pepper and serve at room temp or cold.
I also have a recipe on my blog for Macaroni Pie, it' SO delish and super easy. It's great for a lighter meal and you can serve it alongside a salad too.

Thanks for the advice!
We ended up doing a vegetable and dip platter, shrimp cocktail platter, grilled up some clams and drank! It was fun :)
TOO MUCH FOOD, but the menu worked.
