eggplant pizza? yay or nay?

i'm working hard to get SO to eat a little less meat and less ordering out.

has anyone tried eggplant pizza?
how was it?

i have mushrooms, peppers, and onions for a topping.

We tried it with zucchini...didn't satisfy the pizza craving for us...I would rather make the 2 ingredient dough (self-rising flour and greek yogurt) and load it up with veggies. Or make eggplant parm or rollatini...

Gotcha. kind of the same as cauliflower pizza.
Some things should just not be messed with.
The whole point of pizza to me is the dough, sauce and cheese. Toppings optional.

i agree.
this is why i was asking... wondering if i was missing something.

i think i'll just make some good, old fashioned roasted veggies and call it a day lol

See, I love zoodles. I’m also not the biggest pasta fan, so there’s that. I think I eat pasta about once a month.

Yeah, I can't do zoodles. It's just not pasta.
I'm not a huge fan of zucchini to begin with, it is so bland.
We don't eat a lot of pasta anymore, just once in a while when I have a craving for it.

I make my eggplant or zucchini parm similarly to this..,I grill it, then layer it. I do it partly to be healthier, but also because I'm lazy and grilling is easier than breading and frying.

Another good way to do it is to dip it in an egg Parm cheese mixture (no bread crumbs at all). This way you get extra protein. Still, it’s fried, but they don’t bread eggplant in Italy for eggplant Parm. Let me know if you want the recipe.

If you're looking for an alternate crust, try cauliflower crust... i think it would hold up better than eggplant.
