chopped kale salad
Im looking for something different to eat and was thinking about kale.
suggestions??
I'm very bored with my meals, lunches at work etc.

I love Kale so much! Sautee it with a little Olive oil & chicken ( or veggie) broth , salt & pepper...so good!

This sounds delicious! Last week I bought a bagged salad that was chopped brussel sprouts, kale, and I don't remember what else. It was good and would be perfect for this salad. I wish I could remember the brand.

i love making kale chips.
wash it, dry it, cut out the stem, and tear them to the size you want. pop them in the oven with whatever flavor you want... i love garlic and red pepper flakes.
i throw them on top of salads for a little crunch or i eat them right out of a zipper top bag.
you just reminded me that i didn't buy kale, this weekend. might get some tomorrow.

I know you said your huband does keto? low carb? Have him try this recipe if he can make it diet friendly:

Oh this looks similar to something he makes- minus the glaze. It's hard to make a glaze without honey, but even without it, it looks amazing!!

Costco has a great packaged kale salad.
Kale, green cabbage, broccoli, Brussels sprouts, chicory, roasted pumpkin seeds, dried cranberries and poppyseed dressing

Tuscan kale has a deeper color and is slightly thinner and more tender than curly kale.

Can I just say that if you're looking for a way to make your lunch not boring, kale is not the answer
right, Im so stuck on what to eat, everything seems blah. Looking to lose wt and eat better so thats what came to mind and different so maybe less boring

I saw a few different ones yesterday at shoprite but mann's I think was the brand. They were with the fancier coleslaw type kits. Basically, the top of the bagged salad wall rather than the plain shredded cabbage which is tossed at the bottom lol.
