I tried to make pan browned chick peas this AM, mixed reviews. I was looking for something to snack on
One day I'm going to try these in my air fryer. For now, I'm snacking on plain popcorn, baby carrots, and fruit.
Chickpeas are basically the only reason I actually keep my air fryer. They come out perfectly every time.
the first batch was great, when I tried it again not so great. So disappointed. I'm not using an air fryer just the oven

I just made/ate shrimp Parm for the first time
Recipe was Bevy Goldberg’s lol
We actually made it with alla vodka sauce
It was amazing!

My sister bought me an Air Fryer for my birthday and I love it. I made empanadas and it was so much easier. Yesterday’s I cooked baked potatoes and chicken tenders, best chicken tenders I’ve made!
I always used a frying pan, and it was just too oily or the chicken would get dried out. The chicken was cooked to perfection, nice crust on the outside and juicy on the inside!!
Can you share your empanada recipe?
Sure, but I don't measure so all the seasoning is to taste. I can share how I make the meat.
Ingredients: 1lb of ground beef 1/2 onion chopped 1 small potato cubed into small pieces (optional) 1/4 cup of red bell peppers, sometimes I use green if I don't have red. (estimate) 1 tbs of crushed garlic ( I use the one in the jars) green olives (no pits) 1tbs of olive oil
1 pack of the frozen empanada discs. Found in the frozen aisle, usually next to the frozen latin food. Don't get the orange colored ones.
Powdered ingredients: onion garlic salt pepper Adobo 1 packet of Sazon
Insrtuctions
1. Important!!! Take out the discs so they can thaw. I sometimes forget and its annoying when I realize after the meat is cooked.
2. In a saucepan, I heat the olive oil and then add onions and peppers. I let them cook for a few minutes until onions are translucent. Then I will add the potatoes and garlic. Mix and cook for about 8 more minutes.
3. Add the ground beef and break it up in the pan. Mixing it with the onions, garlic, pepper and potatoes. I let it brown a little.
4. Add all the powdered ingredients. I usually add the Sazon first, because that has a lot of sodium. This helps to measure how much of the other ingredients you want to add. Pretty much season to taste. Cook on medium heat and cover to cook the potatoes through.
Tip: Mix after you add each ingredients. Ex. Add salt mix the meat, then add garlic powder etc.
5. Add the olives last. I throw about two spoon fills in there. If you dont want big olives, you can cut them up before adding them. Be mindful they also add flavor and salt.
6. Last step is to spoon some meat in the middle of the Empanada disc. Fold over and press the edges together. Keeping the edges flat and the meat in the middle. Then use a fork to close it. Press down the edges with the fork.
TIP: Dust a flat pan, cookie tray or clean surface with flour. This avoids the shell from sticking to the table or pan.
7. Add oil to a frying pan. It should be enough to cover most of the empanada except the hump that is stuffed with meat. I fry flat surface first and then flip over. I also hold the fork portion of the empanada with tongs to get the bottom portion brown.
TIP: will fry about 4 at a time.
8. Place in a tray that is lined with paper towels to absorb the oil.
Makes about 15-20
Optional add ins or cooking instructions: 1. Use a fryer instead of a pan (I dont have one)
2. Recently used an Air Fryer and it was so much easier to cook it. I cooked them for 8 minutes on 325 degrees. Just keep checking them to see, since fryers may differ. So much less oil.
3. You can add shredded cheese when stuffing the shells with the meat.
5. I do not drain my meat, everyone else does. I think it gives extra flavor and will use the big spoon with holes in it to fill the shells. So you still get that sauce but not too much oil. Feel free to drain the meat before stuffing.

I made Buffalo Cauliflower Bites in the air fryer. It came out yummy similar to the ones I eat a restaurant.
This week I also made the following: Katie Courics Lemon Chicken with spaghetti noodles, crockpot Tangy BBQ Chicken Thighs alongside Cuban Rice.
Tomorrow I’m going to try making Nashville Hot Chicken in the air fryer!!
