Garden Stuffed Baked Potatoes

A wonderful side dish for any meal!
Ingredients
- 1 (10oz.) package chopped frozen broccoli thawed and drained
- 1 small Onion
- 1 tbs Vegetable oil
- 1/2 cup Ranch salad dressing
- 2 tbs Butter or Margerine
- 2 tsp dried Parsely (optional)
- 4 Russet potatoes
- salt & pepper
Instructions
1. Preheat oven to 425 degrees. Microwave pierced potatoes on High for 6 minutes then turn once and put on for another six minutes or until done. When done slice off potato tops. Scoop out pulp keeping the skins intact. Mash pulp in a meduim bowl. 2. Heat a small skillet over meduim heat and add butter then onion and saute until tender. Add broccoli, salad dressing and onions to potato pulp and mix well. 3. Brush outside of potato skin shells with oil. 4. Spoon potato mixture into shells dividing evenly. Place on a baking sheet. Bake potatoes until heated through (about 15 min) Sprinkle with parsley, salt and peper to taste.
Serve With
Serve with any main dish!
