Chicken Chile Rolls

I used to be on WW. I should get back on! But, my sister in law shared this recipe and it is sooo good. Kinda spicy. 5 pts a roll!

Ingredients

  • 1 1/2 tbsp. chili powder
  • 1 Can chopped green chiles
  • 1/3 C. skim Milk
  • 1/4 tsp. garlic powder
  • 1/4 tsp. salt
  • 2 1/4 tsp. ground cumin
  • 3/4 C fine bread crumbs
  • 4 Boneless skinless Chicken Breast
  • 4 tbsp. shredded monterey jack cheese
  • or pepperjack cheese

Instructions

*Make sure you buy the thin sliced chicken breast. Place green chiles and 1 tbsp. of cheese in each breast. Roll up lengthwise and tuck in ends and secure with tootpicks. Combine crumbs and spices. Dip each chicken roll in milk and then crumbs. Place in baking dish coated with cooking spray. Bake at 400 degrees for 30 minutes or until chicken is done. and Enjoy!! I have also made it the fattening way, actually frying the chicken! They are both yummy!!
