Carrot Muffins
This is actually just the Carrot Cake recipe from my Betty Crocker cookbook, but I prefer to make them in muffin pans and omit the cream cheese frosting. They are soo good that way and I can eat them on the go.
Preheat Oven to 350.
1 1/2 c sugar
1 c veg oil
3 large eggs
2 cups all purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
3 cups shredded carrots (5 medium)
1 cup coarsley chopped nuts (optional)
Grease the bottom of your muffin pan, or use muffin liners.
Beat sugar, oil and eggs in a large bowl with an electric mixer for about 30 seconds or until well blended. Add remaining ingredients, except for nuts and carrots. Beat on low speed for 1 minute, then gently stir in carrots and nuts.
Bake for about 20-25 minutes or until a toothpick comes out clean.
Yum, they are just so good.

Sounds yummy!
Can't wait to try them - Dh hates anything with carrots, so I will have them all to myself!!!!
Do you think I can substitute applesauce for the oil in this recipe?
