I never used my GF for veggies (was not a fain of GF, so gave it away)
--If you have a BBQ, a little italian dressing is find. Or balsamic. Or marinade in soy, terriaki, etc. --I never timed it, just cooked until tender
--or just saute them with garlic and EVOO, some sundried (or diced) tomatoes, and toss with pasta and cheese of choice (parm, feta, riccotta, etc).

You can try roasting them in the oven @ 375 degrees until they're as tender as you like them. Just add some salt, pepper, olive oil. Then you can cut em up and toss with Balsamic Vinegar (or any dressing you like). Then I just toss them with some pasta.

I would dice, sautee, add a can of stewed or diced tomatoes, some goat cheese cook down and roll it into crepes.
