Non-Oily Chicken Cutlets?
I made chicken cutlets last night, fried in vegetable oil but they turned out oily. Any suggestions?

Re: Non-Oily Chicken Cutlets?
I usually use olive oil (not sure if that makes a difference) Make sure the oil is hot (test by wetting fingers and flicking the water into the oil, it'll pop if hot) I also put them on papertowels after cooking.
I never find them greesy.
You know you can bake them too? I love taking chicken and dipping them in a little olive oil and minced garlic, then dipping them in a breadcrumb and parm cheese mixture, then baking them in the oven. OR use low fat mayo (instead of the olive oil)

I use the olive oil sprays, you put less in the pan and they don't come out oily.

Re: Non-Oily Chicken Cutlets?
I tried cookng them in olive oil for the first time over the weekend and then drained them on paper towels--they were pefrect--not greasy at all! I think its b/c of the olive oil! usually we do it w/ veggie oil & its greasy & sometims soggy even, but the olive oil made them crisp & not oily! YUM!

Sooooo not a good idea! The oil can pop and burn you. Use the end of a wooden spoon. Place it in the oil(touch the bottom of the pan), if you see bubbles coming off the end of the spoon, the oil is hot enough.

Re: Non-Oily Chicken Cutlets?
I always fry mine in veg oli and mine are very oily. Make sure that you do not have a lot of oil in the pan and drain them on paper towel very good.

Re: Non-Oily Chicken Cutlets?
I always fry for 2 to 3 minutes a side in olive oil, drain on paper towels then transfer to the oven to finish cooking. They don't come out greasy at all. Also, be sure the oil is hot.
