Hummus

I couldn't see paying $$$ for a prepared hummus so I decided to make my own.

I used:
3 cans of garbanzo beans, drained well (same as chick peas)
about 1/2 cup lemon juice (I kept smelling the mix as it was mixing)
4 cloves garlic
1 jar roasted red peppers, drained well

I mixed the garlic and beans first in the food processor, adding lemon juice until it was a good consistency. Then I added the roasted peppers until blended fully. DH said it was my best concoction yet. Chat Icon

Re: Hummus

You really should add some tahini to that recipe. Tahini is really what gives Hummus its flavor. Its easy to make and delish.

Sometimes I buy a container of hummus (which to be honest, is dirt cheap in the UK and I chop up a tin of Chick Peas into a thick sort of paste, and I add it into my store bought hummus. It gives it much more texture and a little different flavor.

Re: Hummus

hate to admit this, but I actually prefer tahini-less hummus..... there's something about the texture of tahini that doesn't thrill me..... although I agree it's a bit less than authentic w/o it....

love home-made hummus..... I heat up lavash (usually found by the flatbreads by the deli in a supermarket) in an oven until it begins to crisp up and dunk it in the homemade stuff...

yum.....

oh, I also have something you can put ontop of the hummus... got it from a syrian cookbook.

fry a a small onion until clear. Add a 1/4 lb ground lamb, ground cinnamon, allspice, and salt. When the meat is cooked, add a 1/3 cup pinenuts. Pile on top of your hummus Chat Icon

Re: Hummus

The recipe called for tahini, but said that it was pretty expensive and could be left out. I figured try it w/o, then add it if I had to. I will look into it for the next batch though because I'd like to make it w/o the roasted peppers. Thanks for the tips!!!!

Re: Hummus

Here is one for white bean dip, very similar to humus

1 (15-ounce) can cannellini beans, drained and rinsed
2 cloves garlic
2 tablespoons fresh lemon juice
1/3 cup olive oil,
1/4 cup (loosely packed) fresh Italian parsley leaves
Salt
Freshly ground black pepper

Place the beans, garlic, lemon juice, 1/3 cup olive oil, and parsley in the work bowl of a food processor. Pulse until the mixture is coarsely chopped. Season with salt and pepper, to taste. Transfer the bean puree to a small bowl.
