grilled cheese for high maintenance people (like me Chat Icon )

I freely admit this is too much work.... BUT one day, when you're just lounging around and want a different grilled cheese.... give this a try. I promise its worth the effort Chat Icon

(for 2 sandwiches)

Sautee 2T onion (diced fine) in 1T butter. When it's clear, add 1T flour and stir for about 30 seconds. Add 1/4 cup of milk and a bit of salt... keep stirring until thickened. Put aside.

(I like a good white bread for this...) Spread the sauce mixture on one side of 4 pieces of bread. Add 1 slice of crackerbarrel cheddar per slice, and flip 2 pieces together to make a sandwich.

Fry in butter on medium heat... pressing the sandwich thin with a spatula until golden brown...

I usually fry my grill cheese with butter. YUM!

No, it doesn't taste mayonaise-y. It's good, definitely try it!

Do you have to toast the bread before you put it on the frying pan?

DS has had grilled cheese only once. We were at a friend's house and she was making it for her 3 year old son and asked me if I wanted her to make one for my DS. I said yes but I doubted he would eat it. He ate half of a half of that sandwhich...

nope..... the bread toasts in the pan.... Chat Icon

maybe he doesn't like the cheese that was used? We always change the cheese for variety. Cheddar, swiss, fontina... I don't like the taste of processed cheeses (american/velveta)... maybe he doesn't either?
