Chicken/feta/asparagus
I found this one day in a case at ShopRite and decided to make it myself. After some trial and error here ya go: I bought a container of crumbled feta and a 2 packages of chicken cutlets already flattened(Perdue has a really good one) In a 9X13 baking dish: lightly cover bottom with some non stick spray i.e. pam and then cover the bottom with bread crumbs. Then take a chicken cutlet and wrap some feta cheese and 2-3 asparagus stalks inside. Hold together with a toothpick and place into the pan. Once the dish is full (Will hold about 8-10) sprinkle some more bread crumbs and feta on top and bake for about 40 minutes or until the chicken is cooked fully. Serve with rice and veg. of choice. The feta on the outside gets crunchy and on the inside its nice and soft.
DH loved it! He has an enormous appetite (like a whole pound of pasta big) and so I was afraid that I wouldn't have enough. This dish is filling and we had about 1/3 leftover.

I will try that.........however, are you cooking this at 325 for 40 minutes???
