You all asked for it! DH's homeade tahina recipe!

Ok, he asked me to put in a caveat here, that these measurements have been pulled out of his arse, and are only approximations, because he never really follows a recipe Chat Icon

So, for anyone that wants to taste my DH's tahina-out-of-his-arse:

2 cups Sesame seed paste
2 cups water
3 cloves garlic
3 leaves of dill
3 teaspoons lemon juice
1 teaspoon salt

Mix it all up in the processor and VOILA!

This is enough to last about a week, and tastes absolutely AMAZING with Israeli salad or Shakshuka.

We get it at Acme (here in Philly) - if you have a supermarket that has a jewish or israeli section, you should be able to find it there. Sometimes, just sometimes, you can find it in the baking section, like where you would find almond paste and such.

i know wauldbaums has an international aisle, has all kosher products. Im sure you can find there.

Here ya go!

1 large head of cabbage

Sauce:
two 28 ounce cans whole peeled tomaties with juice
1 large onion finely chopped
1 apple, peeled, cored and coursely grated
1/4 cup fresh lemon juice
1/4 cup sugar
1/4 cup packed brown sugar
1 teaspoon sour salt
Cup dark raisins
1 tablespoon kosher salt
1/4 teaspoon ground pepper

Filling:
2 pounds ground beef (we use veggie beef crumbles)
1 large onion, grated
2 eggs
2 tablesppons uncooked long grain rice
1 tablesppon matza meal
2 1/2 teaspoons kosher salt
1/2 teaspoon ground pepper

Directions:
1. Prepare the dcabbage by removing dark outside leaves. Bring a large pot of water to a boil and add the cabbage and cook for 10 minutes. Using a fork with a long handle, remove cabbage from pot and place in a shallow pan and remove as many leaves as possible, cutting them away from the core with a sharp knife. Shake excess water and set leaves aside.

2. Bring water back to boil, return cabbage to water and boil about 5 minutes. Using the same procedure, remove as many leaves as possible. Repeat until you remove about 20 leaves. Pare raised portions of veins. Set leaves aside.

3. Prepare sauce - place tomatoes with liquid in saucepan and crush tomaties with wooden spoon. Bring to a boil over a medium heat. Reduce heat and cook 15 minutes, or until slightly thickened. Stir in onion, apple, lemon juice, granulated sguar, brown sugar, sour salt, raisins, kosher salt, pepper and cook 15 minutes longer. Taste the sauce - it should be balanced between sweet and sour. For sweeter add sugar, for more tart add more lemon juice.

5. Prepare filling - place all ingredients in large mixing blow and mix thoroughly.

6. Assemble rolls - place one cabbage leaf concave side up. Put 3-4 tablespoons filing in center of the leaf. Roll up tightly, tucking in ends. Repeat until all the filling has been used.

7. Spoon thin layer of sauce onto bottom of large covered saucepan or Dutch oven. Arrange stuffed rolls seam-side down in layers over the sauce. Pour remaining sauce over stuffed cabbage. Cook, covered, on low heat 1 1/2 to 2 hours.
