I would start with something small and with straight lines, like a simple baby quilt.

You could do something like this:

Here are directions

If you are going to try a quilt I would pick up a rotary cutter/mat/ruler set - they are faster and more accurate than useing shears

Pajama pants are also really easy.

pillows are very easy without trim, you cut your 2 squares and place the fabric face into each other (make the squares 2" larger then the size you actually want) and sew 1" in all the way around starting in the center of the side (don't start on a corner) except leave about a 3" opeing in the middle of the last one.

now turn them inside out. use a straight pin the pull the corners out if they dont turn out all the way.

Stuff them with stuffing.

Now back to the opeing. Fold the edges inside and sew on the outside, to close the opening. (for this you will need, if your not already using, a thread thats color is similar to your fabric) and thats it.

Pillows are the easiest.

Put 2 square (size that you want or size of the insert pillow) the right side together. The right sides of the fabric face each other. So when you saw the fabric you see the wrong side of the fabric.

You saw the "square". 3 straight lines and on the 4th side you will leave an opening to you can stuff the pillow (either with polyester fill or a pillow form). Turn the fabric inside out through the opening. Stuff the pillow. Hand stitch the opening.

ETA: did not see post above about how to make pillows.
