Macaroni Salad!

4 cups uncooked elbow macaroni
1 cup mayonnaise
1/4 cup distilled white vinegar
2/3 cup white sugar
2 1/2 tablespoons prepared yellow mustard
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1 large onion, chopped
2 stalks celery, chopped
1 green bell pepper, seeded and chopped
1/4 cup grated carrot (optional)
2 tablespoons chopped pimento peppers (optional)


DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain.
In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrot, pimentos and macaroni. Refrigerate for at least 4 hours before serving, but preferably overnight.

The one above sounds like the recipe on the back of the Ronzoni box (and it makes a HUGE amount)! I made that all the time. I recently made a real quick version last week and it came out awesome.

2 cups of elbow macaroni
1 cup of mayo
2 tablespoons mustard
1 tablespoon sugar
1/2 cup each of chopped red and green pepper
1/2 cup chopped red onion
1/2 cup chopped carrot
salt and pepper to taste

Cook and drain macaroni according to directions. Rinse with cold water immediately and drain well. Mix mayo, mnustard and sugar and add into macaroni. Add chopped peppers, onion and carrots. Refrigerate.

I do what chmlengr does too. I let the macaroni sit for a while though, because warm macaroni absorbs all the 'sauce'.

I do this but I use scallions instead of red onion and I add crumbled bacon too. It is so good.

I make this one all the time - I got it from the food network website - everyone loves it!

2 cups dry elbow macaroni, cooked, rinsed, and drained
1/3 cup diced celery
1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon minced flat-leaf parsley
1/2 cup diced vine-ripened tomato (optional)
1/2 cup prepared mayonnaise
3/4 teaspoon dry mustard
1 1/2 teaspoons sugar
1 1/2 tablespoons cider vinegar
3 tablespoons sour cream
1/2 teaspoon kosher salt, plus more to taste
Freshly ground black pepper

In a large bowl combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

1 box elbows
1 cup mayo
1/2 cup sour cream
4-6 hard boiled eggs chopped
chopped celery & carrots


Boil elbows & rinse cold water , Once the elbows are cooled down
I mix all the above together & refridgerate

Its approx measurements, but the sour cream adds a great touch,

I just make elbow macaroni and mix it up with ranch dressing. You can throw whatever small cut veggies you like in it. Its yummy!
