Food shopping suggestions!
My schedule has become a little hectic lately and between DH traveling/working and my own work/gym/class stuff I have zero time to prepare elaborate healthy meals.... so I'm aiming for quick, easy healthy meals. We are vegetarians so we're a little limited, but we are always eating the same things!
I'm going to make a veggie meatloaf on sunday - but i'd love to make something else big for easy breakfasts...like muffins or scones or something.... but I need healthy options. What do you guys do food-wise to prepare for the week??
I also plan to fill a huge tub w/ salad so we can take as needed and add to lunch or dinner
Help!

I buy Vitatops from the health food store. They are just the tops of muffins fortified with vitamins, They are very filling and are only 100 calories each!
Lunch is usually hummus w/veggies or an vegetable omlette.
For vegetarian meals I make okra curry or chickpea curry. I make lentils and rice or red kidney beans and rice too.
