Wow! Easy Biscotti I just made
1/2 cup vegetable oil or olive oil (i use olive) 3 eggs 1 cup sugar 1 tablespoon of your favorite extract (i used 1/2 tablespoon of vanilla and 1/2 tablespoon of almond) 3 1/4 cups all-purpose flour 1 tablespoon baking powder chopped nuts , dried cranberries - whatever your heart desires
Preheat the oven to 375 degrees F.
Grease cookie sheet with spray or butter.
Beat together the oil, eggs, sugar and extract flavoring until well blended.
Add to mixture baking powder, then slowly add the flourto form a heavy dough. Add nuts, cranberries etc.
Wet hands and divide dough into 2 pieces. Form each piece into a long log as long as your cookie sheet. PRess down 1/2 inch thickness (should be about 1/2 inch thick and about 3" wide)
Bake for 20-25 until golden brown.
Remove from the baking sheet - let cool 5 minutes (dont wait longer than that) and witha big knife, slice each 1 crosswise into 1/2-inch slices.
Place the slices cut side up back onto the baking sheet. Bake for an additional 5 to 7 minutes on each side. Cookie slices should be lightly toasted.
