Eggplant Parm

Can someone recommend a nice and easy recipe for me? Thanks!!

I peel and slice the eggplant in rounds i mix egg in one bowl and breadcrumbs salt pepper garlic powder and cheese in another and bread the eggplant... you can either fry it in olive oil or put them on a sheet pan and drizzle with olive oil or cooking spray... i make a quick tomato sauce heat garlic and oil and add a can crushed tomatoes basil black pepper and oregano and let simmer for 15 min... grate mozzarella cheese

put some sauce in the bottom of a pan
layer the bottom of a pan with the eggplant and top each eggplant slice with mozzarella more sauce and grated cheese continue layering till there is no more and top off with sauce and cheese bake till the cheese melts

even easier- go to trader joes and buy the pre breaded eggplant pieces

bake according to package until crispy then top with sauce and mooz cheese

This is one of those things I only eat VERY sparingly b/c I feel like you just HAVE to bread and fry the eggplant and use REAL grated and mozerella cheese in order for it to be worthwhile .........

That being said, I wouldn't call my recipe 'easy' .......well, it's not 'hard' but who the hell wants to fry all of that eggplant ?? ugh ! - Chat Icon Chat Icon

preheat oven to 450
wash and slice the eggplant
dip the slices in egg wash and then italian bread crumbs
put the breded slices on baking sheet and cook for 5 minutes on each side
pour on tomato sauce and diced tomatos
add parmesan cheese
cook for 10 minutes


It tastes exactly like the restaurant we used to live by in Long Island. Very easy, too.

i have never made eggplant parm since i have only recently started eating eggplant but i am going to buy this and try it

I'm a renegade Chat Icon I prefer unbreaded eggplant! I slice the eggplant, bake them for a while, and then fry them. then layer with homemade sauce (a very complex recipe Chat Icon ) ricotta mixed with egg and herbs, and fresh mozzarella... then bake!

My recipe is not that easy - before I bread it and fry it, I cut the eggplant up into slice, put it in layers in a strainer, pour kosher salt over each layer, put something heavy on the top, and then let all the moisture drain out of the eggplant for few hours. Then I lay it out and wipe it down to get most of the salt off. Its very time consuming, but makes it taste so much better. DH always tells me mine tastes better than at restuarants.

You're NOT alone!!! My family has NEVER used breadcrumbs in eggplant parm it's too heavy and "bready" for lack of a better term. Chat Icon

We instead lightly egg and flour the thinly sliced eggplant and then fry it.

Then it gets layered with sauce and mozzerella and baked.

Yes. I read somewhere once that it was the "trick" to making great eggplant parm. I have never gone back. Its so worth the extra work. Just make sure you get most of the salf off, otherwise it will be too salty.
