Passover

I am the first to admit how much I loath the traditional food for this holiday. I can "fondly" remember those o cereal things that my parents bough for us as a kid. I think we had the same box a few years in a row.... All the eggs, potatoes, it was disgusting.

I have come up with my following passover week menu. I am posting it here so that you can survive the holiday too. It is a lot of work. I am going to be honest, I am in the kitchen for at least 3 hours a day. However, I have not had a single complaint from DH or DS. In fact, today DS told me this was his favorite holiday ever.

Night 1: Seder

Day 2:
Breakfast at mom's: Matzah Brie with apple sauce, passover muffins
Lunch: Tuna fish on matzah
Snack: Fruit, macaroons
Dinner: Seder

Day 3:
Breakfast: apple muffins, passover rolls with passover jam and cream cheese, scrambled eggs
Lunch: Matzah pizza with 4 cheses
Snack: chocolate lolly pops, grandma's sponge cake left over from seder
Dinner: Salmon, potato pancake, applesauce, green beans

make ahead for tomorrow - moist yellow "cake" do not frost

Day 4:
Breakfast: "french toast" using the moist yellow cake with apple sauce
Lunch: Tunafish, with mayo and red peppers on bibb lettuce. Tam Tam crackers, fresh motzarella cheese
Dinner: Brisket with onions and home make cranberry sauce relish; sweet potatoes with pineapples topped with marshmallows, salad
Home made cheesecake with macaroon crust

Day 5:
Breakfast: apple muffins, scrambled eggs
Lunch: left over tuna fish see day 4
Snack: Cheese cake with macaroon crust
Dinner: Matzah and potato crusted chicken cutlets with broccoli and apple kuggle, salad

Day 6:
Breakfast: Potato, zucchini, red pepper, and egg fritata. You could add lox and chives too. You could top it with crem fresh as well.
Lunch: Left over brisket and apple kuggle
Dinner: Meatloaf with mashed potatoes and a veggie

Day 7:
Breakfast: Blintzes or eggs (scrambled or omelet)
Lunch: Leftovers chicken or meatloaf with left over sides or matzah pizza
Snack: fruit
Dinner: Lamb Chops or Veal Chops with roasted butternut squash, onions, spinach leaves and craisins.

Day 8:
Breakfast: matzah brie with apple sauce
Lunch: leftovers
Dinner: PIZZA

Bumping for 2011. I was able to get Manichevitz passover blintzes in cheese and another brand in blueberry. I also was able to find passover french fries and passover chicken nuggets. I am going to make Quinoa Mushroom Pilaf too

If you have any suggestions or ideas please feel free to add to this.

Not sure if you should eat lamb on passover? Also not sure if marshmellows are CFP.

There are K for P marshmallows. Also lamb is kosher for passover. Rules on eating lamb for passover (we don't roast it on a spire Chat Icon) k for p marshmallows

I always make a spinach feta pie with a matzah crust it comes out great!

Thank you!!! I hate hate hate Passover with a passion. Could you please give me your apple muffin recipe??? Does it taste like a Passover cake? I think I have a serious aversion to matzoh meal lol

I use the manachevitz mix and doctor it by adding small pieces of apples, or blueberries or chocolates. It actually tastes like an apple bran muffin and is the only boxed mix I like of all those mixes.
